This blog is where I like to put to recipes that I have tried, know, and haven't tried. Sometimes I try so many new recipes that I can't remember if I've tried them and what they tasted like. Therefore, this blog documents my cooking adventures so that I can keep sane in the kitchen. (If it has a source, then I've linked back to it.)

Heart Attack BLT

Ingredients:
bread *
tomato slices
lettuce leaves
bacon
mayonnaise
*I used homemade Italian Cheese bread. I really liked the extra flavor.
Recipe:
1. Toast bread.
2. Cook bacon.
3. Spread mayo on bread then layer with lettuce, tomatoes, and bacon.

We liked this version of the BLT. There was a lot of bacon (which is why I called it the Heart Attack BLT). I like being able to actually taste bacon when I have a BLT. Definitely not on the healthy list, but so good. I think next time I won't toast the bread as much....I just wasn't sure how long it needed to be toasted since the slices were so thick!

Satay Chicken Pizza

Ingredients:
1 T. vegetable oil *
2 skinless, boneless chicken breast halves, chopped
1 c. prepared Thai peanut sauce **
1 bunch green onions, chopped
4 small pita breads
4 slices provolone cheese
* I used olive oil. I like the taste better
** I used Melissa Black's Thai Chicken peanut sauce. That recipe is coming later this week!
Recipe:
1. Heat oil in a skillet over high heat. Saute chicken pieces in hot oil for 6-7 minutes. Do not overcook!
2. Preheat oven to 425 degrees.
To Assemble Pizza:
1. Spoon peanut sauce on each pita, followed by chicken, green onions, and slices of cheese.
2. Place on lightly greased cookie sheet and bake in oven for 10-12 minutes, until cheese is melted and bubbly.
3. Let stand for 1-2 minutes outside of oven before you cut with pizza cutter.

This was good and I liked it, but I thought it was missing something. I think it would have been good with cilantro, but I think the taste I was looking for was something sweet....like pineapple. I don't know. It was still good. And easy to put together.

Philly Sandwhiches

Ingredients:
Spread:
1 c. mayonaise *
2 cloves garlic, minced
Filling:
1 T. olive oil
1 lb. beef round steak, cut into thin strips **
2 green bell peppers, cut into strips ***
2 onions, sliced into rings ****
4 hoagie rolls, split lengthwise
mozzarella cheese *****
1 t. dried oregano
* I only used about 1/4 c.
** I actually bought a 1 lb. Philly meat package from Wal-Mart. It comes with 4 slabs of meat, but as you cook it, the meat falls apart and eliminates the task of thinly slicing the meat.
*** I used about 1/2 of a large green pepper and 1/2 of a red pepper.
**** I definitely didn't use 2 onions. I only used about 1/2 of an onion.
***** I ditched the mozzarella and went with provolone slices.

Recipe:
1. In a small bowl, combine mayonnaise and minced garlic. Cover, and refrigerate.
2. Preheat oven to 500 degress.
3. Heat oil in a large skillet over medium heat. Saute beef until lightly browned. (I drained the oil and juices before the next step.)
4. Stir in peppers and onion, and season with salt and pepper. Saute until vegetables are tender, and remove from heat.
5. Spread each bun generously with garlic mayonnaise. Divide beef mixture into the buns. Top with cheese and sprinkly with oregano.
6. Place sandwiches on a baking pan. Heat sandwiches in oven until cheese is melted or slightly browned.

For a homemade Philly....I don't know if it gets any better. So, so, so good. While it was a more expensive meal (by our standards), each sandwich was about $2.00 which is cheaper than you're going to get it elsewhere. I really liked the garlic spread and thought it added just the right taste to the sandwich.

Hawaiian Haystacks


Ingredients:
2 cans cream of chicken soup
1 can chicken broth *
3 c. cooked, cubed chicken
steamed rice
* I just made 1 c. of chicken broth with a bouillon cube.
Toppings:
Chow mein noodles
pineapple chunks or tidbits
cheese
oranges
green onions, diced
peanuts
green pepper, diced
Recipe:
1. Mix soups together and simmer.
2. Add chicken and simmer for 10 minutes.
3. Ladle chicken sauce over rice and add toppings.

Either this was really good or we just haven't had haystacks in years! We added some extras to the toppings, like cilantro (WAY good) and red peppers. Super good and felt really good to eat after an intense workout. You know how after working out you don't want any thing heavy? Well, this is dense, but not heavy.

Reivel Kuchen


Ingredients:
Base:
1 egg
3 T. sugar
pinch of baking powder
just enough flour to make thin paste
Topping:
5 T. brown sugar
5 T. white sugar
3/4 c. flour
3 T. shortening

Recipe:
1. Mix fruit of choice with first 4 ingredients.
2. Mix the remainder of the ingredients in a separate bowl with fork or pastry cutter.
3. Place fruit mixture on top of bread dough. Sprinkle with topping mixture and dust with cinnamon. *
4. Bake at 350-degrees for 30 mintes.
* I used the other half of pizza dough from here.

I am biased though. This is the stuff my grandmas would make when we came to visit. I love the clumps of brown sugar and cinnamon on top. And peach is my absolute favorite!

Homemade Pizza Dough and Sauce

We chose to do Canadian bacon with pineapple and sprinkled Parmesan cheese on top.
Pizza Sauce
Ingredients:
About 12 plum tomatoes, seeded, skinned, and pureed in a food processor *
1 white onion, chopped fine **
2 tablespoons of olive oil
2 tablespoons garlic ***
2 tablespoons sugar
1 tbsp salt
1/2 tablespoon red pepper
2 tablespoons minced garlic ****
* I didn't have that many tomatoes, nor will I buy that many for pizza sauce. So, I just used a can of tomato sauce.
** I don't like working with onions, so I replaced it with 1/3 c. dried chopped onion
*** I didn't have fresh garlic on hand so I used garlic powder to taste
**** I didn't have 2 T. of minced garlic so I used 3 t.
Recipe:
1. Heat your oil in an 8 quart pan. Add your onions–we want to sweat them until they are transparent. This should take about six minutes. Then, add your garlic. By now, your kitchen should be filling with a delectable aroma–excellent!
2. At this point, we want to add the tomato puree we made, along with the sugar, salt, and red pepper. Bring the whole mixture to a boil. Then reduce heat and simmer, stirring occasionally, as the sauce thickens. The sauce should be pretty smooth when we finished, provided we did okay during the food-processing.

We liked this recipe ok. The red pepper was way too strong. Next time I think I will either eliminate the pepper or just cut it by half. There was enough sauce for 2 pizza crusts so I put the extra in the freezer for later.
Pizza Dough
Ingredients:
2 T. yeast
1 t. salt
2 T. sugar
2 c. warm water
4 c. flour
Recipe:
1. Mix together the water, sugar, yeast, and salt. Let is rise for 10 minutes.
2. Add approximately 4 cups flour and let rise for 20 minutes.
3. Divide dough in half and form into 2 pizza crusts. *
4. Garnish with sauce, cheese, and favorite toppings.
5. Bake at 375-degrees for 15-20 minutes.
*Because I was trying to do 5 things at once I let the crust rise after putting all the extra stuff on for about 20 more minutes.

Honey Mustard Grilled Chicken

Ingredients:
1/3 cup Dijon mustard
1/4 cup honey
2 tablespoons mayonnaise
1 teaspoon steak sauce
4 skinless, boneless chicken
Recipe:
1. Preheat the grill for medium heat.
2. In a shallow bowl, mix the mustard, honey, mayonnaise, and steak sauce. Set aside a small amount of the honey mustard sauce for basting, and dip the chicken into the remaining sauce to coat.
3. Lightly oil the grill grate. Grill chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Baste occasionally with the reserved sauce during the last 10 minutes. Watch carefully to prevent burning!

We had this one for Christmas Eve dinner with the Ames and then again 4 days later with Krista. It tastes best on really thin pieces of chicken.
