What have I cooked?

This blog is where I like to put to recipes that I have tried, know, and haven't tried. Sometimes I try so many new recipes that I can't remember if I've tried them and what they tasted like. Therefore, this blog documents my cooking adventures so that I can keep sane in the kitchen. (If it has a source, then I've linked back to it.)

Breakfast Muffins

Ingredients:
1 3/4 c. all-purpose flour
1/3 c. white sugar
2 1/2 t. baking powder
1/2 t. salt
3/4 c. milk
1 egg
1/3 c. butter, melted
1-2 t. vanilla *
1 c. fresh blueberries or other fruit, or chocolate chips (rinse and coat with flour to prevent sinking while cooking) **

*I added the vanilla to this recipe and I think it makes a subtle, but important difference.
** I really like loaded muffins so I add 2 c. of blueberries or whatever other fruit.

Recipe:
1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
2. Add milk, egg, butter, and vanilla; mix until ingredients are moistened, do not overbeat.
3. Stir in fresh fruit. Spoon batter into 12 greased muffin cups.
4. Bake at 400 degrees for 20-25 minutes, or until tops spring back when lightly touched.

This is my favorite muffin recipe so far. Quick and easy. Little mess and tasty. And they freeze great! Daniel loves blueberry muffins so this is the perfect breakfast and snack for him!

Hawaiian Haystacks


Ingredients:
2 cans cream of chicken soup
1 can chicken broth *
3 c. cooked, cubed chicken
steamed rice
* I just made 1 c. of chicken broth with a bouillon cube.
Toppings:
Chow mein noodles
pineapple chunks or tidbits
cheese
oranges
green onions, diced
peanuts
green pepper, diced
Recipe:
1. Mix soups together and simmer.
2. Add chicken and simmer for 10 minutes.
3. Ladle chicken sauce over rice and add toppings.

Either this was really good or we just haven't had haystacks in years! We added some extras to the toppings, like cilantro (WAY good) and red peppers. Super good and felt really good to eat after an intense workout. You know how after working out you don't want any thing heavy? Well, this is dense, but not heavy.

Reivel Kuchen


Ingredients:
Base:
1 egg
3 T. sugar
pinch of baking powder
just enough flour to make thin paste
Topping:
5 T. brown sugar
5 T. white sugar
3/4 c. flour
3 T. shortening

Recipe:
1. Mix fruit of choice with first 4 ingredients.
2. Mix the remainder of the ingredients in a separate bowl with fork or pastry cutter.
3. Place fruit mixture on top of bread dough. Sprinkle with topping mixture and dust with cinnamon. *
4. Bake at 350-degrees for 30 mintes.
* I used the other half of pizza dough from here.

I am biased though. This is the stuff my grandmas would make when we came to visit. I love the clumps of brown sugar and cinnamon on top. And peach is my absolute favorite!
