This blog is where I like to put to recipes that I have tried, know, and haven't tried. Sometimes I try so many new recipes that I can't remember if I've tried them and what they tasted like. Therefore, this blog documents my cooking adventures so that I can keep sane in the kitchen. (If it has a source, then I've linked back to it.)

Pre-Baked Pizza Crusts

These are the 1 of 5.
Her little pizza is the 4 of 5

Ingredients:
1 packet yeast OR 2 1/4 t.
1 1/4 c. warm water
3 c. bread flour
1 1/2 t. sea salt *
2 T. olive oil

* I didn't have any sea salt so I just used Kosher salt

Recipe:
1. Add yeast to warm water. Mix and set aside for 5-10 minutes.
2. If using a stand mixer, use the dough hook. Mix flour, salt, and olive oil. Add yeast mixture and on medium speed, mix dough. Continue letting dough hook kneed until smooth and elastic (about 10 minutes).
3. Line two baking sheets with parchment and dust with flour.
4. Divide dough into 16 even pieces. Tuck edges under to make 16 small balls of dough. Place each ball onto prepared baking sheets. Cover with plastic wrap and place in lukewarm oven for 45 minutes to rise.
5. After rising, roll dough out into 3-4 inch circles. Dough should not be too thin.
6. Place baking sheet in oven and preheat everything to 475 degrees F.
7. When oven and sheets have preheated, bake for 10-15 minutes or until lightly browned.
8. Use immediately, store in air tight container for 3 days or freeze.
9. To use dough to make fresh pizza straight from the oven rather than pre-baked crusts, increase oven temperature to 500 degrees, and after rolling out the dough, top raw dough with sauce, cheese and toppings and bake on pizza stone for 10-15 minutes or until browned and bubbling.

First things, first. I loved working with this dough. It was so smooth and fluffy and felt like it was going to make a delicious pizza crust. I love bread flour! However, I think the temperature and cook time were way too high/long. Instead of soft little pizza crusts, they came out as hard burnt crackers (as seen in the picture). I, thankfully, saved a few just in case it didn't turn out and cooked them at 450 for 6 minutes. They turned out perfectly! So, I don't really like the recipe as is, but with the adjustments it turns out well.

Copycat: Dole Pineapple Whips

Ingredients:
2 20-oz. can Dole crushed pineapple
2 T. pineapple juice (from canned pineapple)
2 T. lemon juice
2 T. lime juice
1/3 c. sugar
1 1/2 c. heavy whipping cream, whipped

Recipe:
1. Drain pineapple and reserve 2 tablespoons of the juice; set aside.
2. Place pineapple, lemon and lime juice, pineapple juice, and sugar in a blender or food processor. Cover and blend until smooth.
3. Pour mixture into 2 1-quart freezer zipped bags. Lay flat in freezer.
4. Freeze 1 to 1 1/2 hours or until slushy.
5. Once pineapple mixture has reached desired consistency, whip the cream and then fold the whipped cream and pineapple mixture together.
6. Return to freezer until completely frozen, about 1 hour. Serve.

This is close, but it's not it. And if you like your Dole whips just like they serve them, then you're going to be able to tell the difference. This is the ONE thing I would splurge on when Emily and I would go to DL with the kids during the week. I love this stuff and it has to be right. I feel like the pineapple taste isn't strong enough and the cream gives it the wrong texture. A little too slippery of an after taste. But, it is close. And it is easy to make. It's still good. And.... I still eat it for breakfast.

Fruit Salsa


Ingredients:
1 c. finely chopped strawberries
1/3 c. orange, peeled and finely chopped
2/3 c. kiwifruit, peeled and finely chopped
1/2 c. finely chopped fresh pineapple or one 8-oz can crushed pineapple, drained
1/4 c. green onion, thinly sliced
1/4 c. yellow or green sweet pepper, finely chopped
1 T. lime or lemon juice
1 fresh jalapeno chile pepper, seeded and chopped, optional
1 recipe Cinnamon Tortilla Crisps

Recipe:
1. In a bowl combine strawberries, orange, kiwifruit, pineapple, green onions, sweet pepper.
2. Cover and chill for 6-24 hours. If you're going to chill for longer than 6 hours, then stir in the strawberries just before serving.
3. Serve with Cinnamon Tortilla Crisps.

Well, LaDon did not think this was going to be good at all. But, surprise! It actually was. The green onion is pretty strong among all the fruit, but it off-sets everything well. Also, the sweet pepper is noticeable but is good with the kiwi and strawberry. I will definitely make this again at some point.

Hawaiian Pizza Topping

Ingredients:
1 can of pineapple chunks or tidbits, drained
3-5 T. brown sugar

Recipe:
1. Dump the pineapple and brown sugar into a sauce pan and simmer for 10 minutes. Drain the pineapple and place on pizza.

Really, you can't tell that the pineapple was simmered in brown sugar. I think it made it a bit sweeter and softened the pineapple up since the crust cook time was short. But, it was a nice little extra touch on the Hawaiian pizza we had. I think the extra pineapple would be good with French Vanilla ice cream.....I'll have to try that.

Acini Di Pepe Salad aka: Frog Eye Salad

Ingredients:
1 lb. Acini Di Pepe or Quinoa
1 c. Sugar
2 T. flour
1/2 t. salt
2 eggs, beaten
2 c. marshmallows (optional)
1 3/4 c. pineapple juice (from drained pineapple chunks, tidbits and crushed)
1 20-oz. can crushed pineapple
1 20-oz. can pineapple chunks
1 20-oz can pineapple tidbits
3 cans mandarin oranges
1 9- or 12-oz container of whipped topping
any additional fruit you wish to add (I could see strawberry slices being delicious...)

Recipe:
1. Cook macaroni (aka: acini di pepe) in boiling, salted water until tender. Rinse in cold water, drain and cool.
2. In saucepan combine sugar, flour, salt, beaten eggs, pineapple juice and marshmallows. Cook, stirring until thick and smooth. Cool.
3. Add the sauce to the noodles with the fruit. Chill in refrigerator. When ready to serve, add whipped topping and stir.

So, growing up in the Mormon culture, I feel like Frog Eye Salad was at every ward activity. And honestly, I never tried it because the name grossed me out.....I mean, seriously...frog eyes? Anyway, one of the girls in our ward made this salad for our salad recipe night and I finally got up the nerve to try it. And guess what!? I actually liked it. The texture of the pasta took me a few bits to adjust to, but I really like whipped cream and mandarin oranges. I like it, but I don't think I will ever make this recipe because LaDon would HATE the texture of the salad. Sad:(

Thai Chicken

Ingredients:
Sauce:
4 chicken breast halves - steamed and cubed or shredded
1 c. chicken broth
2 T. soy sauce
4 T. chunky or creamy peanut butter
1 garlic clove, crushed *
red pepper flakes to taste (usually about 1/4 t.)

Condiments: (whatever you would like)
chopped peanuts
coconut
crushed pineapple
red, green, yellow diced peppers (Melissa's favorite!)
canned Mandarin oranges (my favorite!)
raisins or Crainsins
chow mein noodles (are those the crunchy ones?)
cilantro, chopped

* I usually just used minced garlic


Recipe:
1. Combine and heat chicken broth, soy sauce, peanut butter, garlic, and pepper until peanut butter is dissolved.
2. Add pre-cooked chicken.
3. Serve over steamed rice with your choice of condiments. *

*I like to make my rice chicken flavored by adding a bouillon cube to the water. So. Much. Better.

This is one of our absolute favorite recipes! We love it....so good. The great thing about this dish is that it's new every time you have it because you can make it taste so different depending on what you put on it! And, if you don't like too much kick you have total control over that and can experiment with just the right amount. We, however, like the kick. Oh, and I usually don't have all the favorite condiments on hand, but I usually have enough to make it work! Another perk, this is quick!

Also use the sauce can be used for Satay Chicken Pizza.

Hawaiian Haystacks


Ingredients:
2 cans cream of chicken soup
1 can chicken broth *
3 c. cooked, cubed chicken
steamed rice
* I just made 1 c. of chicken broth with a bouillon cube.
Toppings:
Chow mein noodles
pineapple chunks or tidbits
cheese
oranges
green onions, diced
peanuts
green pepper, diced
Recipe:
1. Mix soups together and simmer.
2. Add chicken and simmer for 10 minutes.
3. Ladle chicken sauce over rice and add toppings.

Either this was really good or we just haven't had haystacks in years! We added some extras to the toppings, like cilantro (WAY good) and red peppers. Super good and felt really good to eat after an intense workout. You know how after working out you don't want any thing heavy? Well, this is dense, but not heavy.
