This blog is where I like to put to recipes that I have tried, know, and haven't tried. Sometimes I try so many new recipes that I can't remember if I've tried them and what they tasted like. Corn, Black Bean, Avocado, and Tomato Salad

Ingredients:

1 7-10 oz. package grape tomatoes, chopped *
1 avocado

1 can black beans, rinsed and drained
1 can whole kernel corn, drained
1 T. fresh cilantro, chopped
2 1/2 T olive oil
1 T. red wine vinegar **
juice from 1 small lime
3/4 t. sea salt
1/2 t. coarse black pepper

*I just used a few Romas
** I'm just now realizing that I never put this in! I love red wine vinegar too!

Recipe:
1. Toss chopped avocado with juice from 1 small lime.
2. In a large bowl, combine avocado, grape tomatoes, black beans, corn and cilantro.
3. Stir in olive oil, red wine vinegar, salt and pepper. Stir to coat.
4. Refrigerate until you are ready to serve.

Obviously, it's a super easy recipe to throw together. I have to say, when I made this, I thought it was fine, but it didn't wow me at all. But, typing up the recipe, I realized that I totally skipped the red wine vinegar. So, I'm sure with the vinegar in there it would have added that little extra something I was looking for.

Slow Cooker Cream Cheese Chicken Chili

Ingredients:
1 can black beans, rinsed and drained
1 can corn, undrained
1 can Rotel, undrained (aka: green chilies and tomatoes)
1 t. cumin
1 T. chili powder *
1 t. onion powder
1 8-oz pkg. light cream cheese
2 chicken breasts

* I thought the whole T. was a little too much heat for me, so next time I will only use 1/2 T.

Recipe:
1. Drain and rinse black beans. Place chicken at bottom of slow cooker pot. Pour on can of corn, Rotel, and black beans.
2. Top with seasonings and ranch mix. Stir together.
3. Place cream cheese on top. Cover with lid and cook on low 6-8 hours.
4. Stir cream cheese into chili. Use 2 forks to shred chicken. Stir together and serve.

A bit spicy for my taste with the whole tablespoon of chili powder, but that's easily fixed. We really liked this chili. I don't really have much to say about it other than it was a creamy version of the Chicken Tortilla Soup, which is one of our all time favorite soups. And, I do think this soup would be good topped with some chopped cilantro.

Navajo Taco Meat

Ingredients:
1 lb. ground beef
1 small onion
1 can chili beans with sauce
1/2 can of diced tomatoes and green chilies
1 pkt. of taco seasoning

Recipe:
1. Brown the beef and add onions.
2. Drain the fat off. I do this by placing the meat in a strainer and then run it under hot water.
3. Add taco seasoning and stir around until meat is evenly coated.
4. Add chili beans and tomatoes. Let simmer for a few minutes.
5. Serve on Navajo fry bread.

This was much closer to how I remember Navajo taco meat tasting. Everything, but the meat sauce, I used came from the previous Navajo Taco recipe posted.

Creamy Chipotle Enchiladas

Ingredients:
2-3 lb. pot roast
10 oz. can of diced tomato with green chilies
8 oz. can Ro Tel enchilada sauce
7 oz. can chipotle peppers in adobo sauce
1/2 t. cumin
1/4 t. oregano
2-3 cloves garlic, minced
1/2 -1 c. heavy cream
1 can of corn, drained
1 can of black beans, rinsed and drained
8 oz. can tomato sauce
1/4 c. cream cheese, somewhere between softened and melted
6 large tortillas
shredded cheddar and mozzarella cheese
sour cream
cilantro, chopped

Recipe:
1. In a medium bowl, mix diced tomatoes, enchilada sauce, chipotle peppers and adobo sauce, cumin, oregano, and garlic.
2. Place roast in crock pot and cover with tomato-chipotle mixture. Cook on high for 4ish hours.
3. Remove roast from crock pot and shred meat.
4. Using a fine strainer, pour juices from crock pot into a medium bowl. Reserve juices. Remove chipotle peppers from strainer. 
5. Replace tomatoes and green chilies (in strainer) in the crockpot. Pour about 2-4 cups of reserved juices into crockpot. Pour in heavy cream and stir together. Replace meat. Add black beans and corn. Continue cooking for another 20-30 minutes. (The key thing here is to have enough juice/sauce to coat the meat. It's not going to cook that long so it shouldn't dry out.)
6. Mix tomato sauce and cream cheese together in a small bowl.
7. Grease 9x12 baking dish and preheat oven to 350 degrees.
8. Lay out a tortilla and scoop meat mixture on to 1/2 of the torilla. Place a handful of shredded cheese on top and then roll the torilla. Place seam side down in baking dish. Repeat until dish is full. (I actually ended up with extra meat so there would be enough to almost make 2 full baking dishes of enchiladas.)
9. Cover enchiliadas with tomato/cream cheese mixture. Top with cheese.
10. Place in oven for 15-20 minutes, until cheeses are melted.
11. Serve and top with sour cream and cilantro.

This was one of those meals that I used whatever I had on hand. It actually turned out really well. I didn't measure anything so the measurements are all my best guess. The chipotle peppers add a pretty good kick, so I used the cream and cream cheese as a way to tone it down a bit. If looking to cut out some of that then you could just remove the chipotle peppers from the adobo sauce before the initial cook time. I really enjoyed this dish and would make it again!

Colorful Quinoa, Black Bean and Corn Salad

Ingredients:
1 c. quinoa, thoroughly washed in a fine sieve
1 3/4 c. water
15-oz. can black beans, thoroughly rinsed
1 c. frozen corn *
1/2 red bell pepper, seeded and finely chopped**
1 Jalapeno chile pepper, seeded and minced
1/2 red onion, finely chopped ***
1/4 c. cilantro leaves, roughly chopped
1/3 c. olive oil
1/4 c. balsamic  vinegar****
salt and pepper

*used a can instead
** I used what I had on hand and that meant cutting out the red pepper and jalapeno and replacing it with just a green bell pepper.
*** I didn't have a red onion on hand so I just used my normal onion substitute of dried chopped onion.
**** I don't really like the balsamic taste, so I substituted it with lime juice. Much better.

Recipe:
1. Combine the quinoa and water in a rice cooker and cook according to the manufacturer's instructions. Alternatively combine the quinoa and water in a medium saucepan, bring to a boil, reduce heat, cover and simmer (not removing the lid!), until all of the water has been absorbed. *
2. Remove from heat and let stand for 5 minutes. Fluff with a fork and let cool slightly.
3. In a large bowl, combine the quinoa, black beans, corn, red bell pepper, jalapeno, onion, and cilantro. Mix well.
4. In a small bowl, whisk together the olive oil and balsamic and pour over the quinoa; toss to coat. Season with salt and pepper.

*I don't have a rice cooker. I followed the instructions on the packaging.

Did I like it? Yes. Would I make it again? Yes. Did LaDon like the quinoa? Surprisingly, yes! I really don't think I would have liked this with the balsamic, so I'm glad I switched it out for the lime juice. Cilantro and lime go better together anyway. Even Ally liked it and that girl never eats new food.

Navajo Tacos


Ingredients:
Meat mixture:
1 onion, chopped
1 lb. ground beef or turkey
3/4 c. water
1 envelope taco seasoning
1 15-oz. can whole kernel corn, drained
1 16-oz. can black beans, drained and rinsed
up to 1 T. chili powder, optional

Fry bread:
3 c. flour
1 T. baking powder
1 t. salt
1 1/2 c. warm water
2 c. vegetable oil, for frying

Toppings:
lettuce
tomato
sour cream
salsa
refried beans
shredded cheese
avocado
cilantro

Recipe:
For meat:
1. Crumble together onion and ground beef. Cook over medium-high heat until meat it cooked through.
2. Add 3/4 c. water, taco seasoning, corn, and black beans. Allow the mixture to simmer while you make the fry bread.
3. Add additional chili powder, if desired.

For fry bread:
1. In a medium size bowl, mix together the dry ingredients.
2. Add water and stir together. Dough may be slightly sticky.
3. Pour the vegetable oil into a medium size saucepan and heat the oil over medium heat.
4. Divide dough into 6 pieces. On a generously floured surface, pat the dough pieces into a flat round shape about 5-6 inches across.
5. When oil is hot, carefully place dough round into the hot oil until the bottom side is golden brown. With a metal set of tongs, flip the round, and cook the other side until puffy and golden brown. Remove the bread and place onto a paper towel lined plate.
6. Pile meat and toppings on the fry bread and enjoy!

Ok, first off, I thought the fry bread was really good. Definitely hit the spot for me. But, the meat sauce is not what I normally have for Navajo Tacos. When I think Navajo tacos, I think a bean and meat chili type topping. So, the fry bread, great. Meat, not so much and need to hunt for the perfect recipe.

Barbecue Chicken Salad with Cilantro Ranch Dressing


Ingredients:
Salad:
2 hearts of Romaine, chopped *
1 can corn
1 can black beans, rinsed
15 grape tomatoes, halved **
3-4 cooked chicken breasts, cubed or shredded
1/2-1 c. favorite barbecue sauce
mozzarella cheese, shredded

*Went with our favorite lettuce: green leaf
**I used 3 hearty Roma tomatoes

Dressing:
1 envelope Ranch dressing mix
1 c. mayonnaise *
1 c. milk
1/2 bunch cilantro
1 clove garlic **
1 lime juiced OR 2 T. lime juice

* I actually did 1/2 c. mayo and 1/2 c. sour cream. Next time I'll sub out the mayo completely.
** I used about 1 t. minced garlic

Recipe:
Dressing:
1. Place dressing ingredients into blender or food processor and combine well. Let sit for a few hours to increase flavor of dressing. *

* My blender is not very good at blending. I should put a new blender or food processor on my gift list for Mother's Day......yes. Anyways.....I just whisked everything, but the cilantro, together. Then I chopped up the cilantro into ity bity pieces and stirred it into the mix.

Salad:
1. Place lettuce in a serving bowl. Layer with corn, beans, and tomatoes.
2. Mix cooked chicken with barbecue sauce and top over salad.
3. Sprinkle top with mozzarella cheese.
4. Drizzle with dressing.

Yes, it's that good. The cilantro dressing and BBQ go really, really well together. Plus, it's got all of those good veggies in it! Very similar to Katie's Mexican Salad. I will definitely be making this one again. Oh, but it does make a rather large batch, so half it and plan on making taco with the leftovers the next night.

Easy Bean Dip

Ingredients:
1 can of refried beans
1 can of corn, drained
1 can of olives, drained and sliced
3-4 Roma tomatoes, chopped
1-2 c. shredded cheese
1/2 - 1 c. chopped cilantro
Sour cream

Recipe:
1. Heat beans. Slice olives, chop tomatoes and cilantro.
2. Layer in a 8x8 pan:
beans
a little cheese
corn
olives
tomatoes
cilantro (or you can just put it on top)
sour cream
remaining cheese
3. Serve with tortilla chips. Refrigerate leftovers.

I think LaDon would probably give it a higher rating, but I don't think it's that amazing. It's good though. Easy to put together. I think taco flavored meat on top of the beans would be good too.

Southwest Pasta Salad

Ingredients:
1/2 lb bowtie pasta
1 14-oz can black beans, drained and rinsed
2 Roma tomatoes, diced or about 3/4 c. of halved cherry tomatoes *
1 large red, yellow, or orange bell pepper, diced
1/2 c. sliced green onions
1/2 c. frozen fresh corn **
zest from 2 limes
8 oz diced cooked chicken, optional
1/2 c Queso Fresco or Cotija cheese or grated jack, cheedar, or pepperjack

* I used 3 tomatoes
** I just used one can of corn

Dressing:
6 T. fresh lime juice (about 3 juicy limes) *
1/4 c. white wine or rice vinegar
4-5 cloves garlic, roughly chopped
1 1/2 t. chili powder
1 t. cumin
1/2 t. coriander
1/2 t. kosher or sea salt
2 t. sugar (add a touch more if your limes are extra sour/bitter)
3/4 c. canola oil
1/2 c. roughly chopped cilantro

* I got enough juice out of 2 limes

Recipe:
1. Place pasta in salted water until cooked. While it's cooking, prepare dressing.
2. Zest your limes and place the zest in a large salad bowl.
3. To prepare dressing: place the lime juice, vinegar, garlic, chili powder, cumin, coriander, salt and sugar in a blender. Process until smooth. *
4. With the motor running slowly, add the oil in a steady stream until incorporated. Add the cilantro and pulse so it gets broken up, but some pieces still remain in tact.
5. Salad: When pasta is done cooking, drain and rinse immediately with cold water to cool. Place the pasta in the large salad bowl with the lime zest.
6. Add black beans, tomatoes, diced pepper, green onions, corn, and chicken if desired.
7. Toss with dressing. Taste, and add additional salt and pepper to taste.
8. For best results, chill for 1 hour before serving. Right before serving, sprinkle cheese on top. Serve with extra lime wedges if desired.

* My blender blade doesn't reach low enough to do this, so I just whisked it in a bowl and really chopped the cilantro.

This is a good pasta salad. Much better than I expected it to be. I really liked it. The lime taste is pretty strong as is the chili powder/cumin. But, still really good. Be warned though, this makes a HUGE batch. As in it's lasted 2 adults lunch and dinner for 3 days and still have some left. A lot. We alternated shredded cheddar and Parmesan on top. Also, plain cheese quesadillas are an excellent side with this. Oh, and I really don't think you need that extra lime wedge. That would be TOO much lime....and I like lime.

Southwestern Cobb Salad


Ingredients:
Vinaigrette:
3 T. white wine vinegar
1 t. honey
3/4 t. ground cumin
1/2 t. smoked paprika *
1/2 t. garlic powder
1/4 t. ground red pepper
2 T. canola oil

Salad:
3 slices bacon, cooked and crumbled
cooking spray
8 oz. skinless, boneless turkey or chicken breast, cut into 1/2 inch pieces **
1/4 t. salt
8 c. torn romaine lettuce ***
1/2 c. diced avocado
1/2 c. (2 oz) crumbled queso fresco, feta, or shredded pepperjack ****
1/4 c. chopped green onions
1 (15 oz) can black beans, rinsed and drained

*Never knew smoked paprika was an option. So, I used what I had and that was ground paprika.
** Got my chicken breast from a rotisserie. Hooray for Costco's $5 chickens!
*** I'm a lettuce snob. I pretty much use green leaf over any other kind of lettuce.
****I went with a mix of shredded pepperjack, mozzarella, and cheddar cheeses.

Recipe:
1. To prepare vinaigrette, combine all ingredients in a medium bowl and whisk to combine, or place in a jar and shake. Set aside.
2. To prepare salad, heat a skillet to medium-high heat. Spray with cooking spray. Sprinkle turkey or chicken with salt and add to pan. Saute until done, about 4 minutes.*
3. Arrange 2 c. lettuce on each of 4 plates and divide ingredients among them. If you want to be specific, each serving should have about: 2 t. bacon, 5 T. chicken, 2 T. pico de gallo, 2 T. avocado, 2 T. cheese, 1 T. green onions, and 1/3 c. beans.
4. Drizzle vinaigrette evenly over salads.

*I'm not sure if the 4 minutes is for raw or cooked chicken. My chicken was already cooked. Rather than coating the pan with cooking spray, I cooked my bacon first, removed the bacon, drained the fat out, and then threw in the chicken. Not that that lowered the calories in any way...

This salad surprised me! I wasn't expecting much since I knew the onion in the pico de gallo was really strong and the pepper hot, but the vinaigrette and every thing else on the salad blended perfectly! LaDon doesn't like vinaigrette very often, so the fact that he really liked this salad including the dressing is saying a lot. Good veggies. Lots of flavor. And very delicious.

Chicken Pot Pie

Ingredients:
2 unbaked pie crusts
1 lb. leftover roasted chicken, chopped into bite-sized pieces
1 12-16 oz. bag of mixed vegetables, thawed
1 onion, minced
1 T. butter
5 medium-small red potatoes, diced
2 cans cream of chicken soup
1/2 t. Kosher salt, or to taste
ground black pepper to taste

Recipe:
1. Preheat oven to 400 degrees. Bring a large pot of water to a boil.
2. When ready, add potatoes to water and boil until tender. Meanwhile, heat about 1 T. butter in a medium skillet. When the butter is bubbly, saute the onion until it's translucent and fragrant. Set aside.
3. In a mixing bowl, combine cream of chicken soup, chicken, vegetables, onion, and potatoes. Season to taste.
4. Place one pie crust on the bottom of a pie plate, transfer the filling to the pie plate, and then top with the other pie crust. Crimp the edges and then cut a few vent holes on top. Place pie plate on a baking sheet and bake for 40-45 minutes or until the crust is golden brown.
5. Remove from oven and allow to stand for a few minutes before serving.

Easy recipe, unless you aren't that experienced in pie crusts. You might get a bit flustered, but it's not as hard as it might seem. The chicken mixture could not be any easier. Especially if you pick up a rotisserie chicken at Costco to use. I really liked the potatoes in this pie, but I thought the actual filling was way to thick when cooked. So, I would probably either add another half can of cream of chicken or add a half cup milk or something to make it a little more runny. Tasted fine enough, but it wasn't a super good pot pie.

Katie's Mexican Salad

Ingredients:
2 heads romaine lettuce, chopped
1 can black beans, drained
1 can corn, drained
1/2 red onion diced
2 roma tomatoes diced
1 c. cheddar cheese, shredded
1 avocado, cubed
1 small can sliced olives
ranch dressing
BBQ sauce
2 grilled chicken breasts, sliced

Recipe:
1. Toss all together using equal parts ranch and BBQ sauce. You can also sprinkle some crushed tortilla chips on top. Super easy. Super yum.

Seriously, so good. This one was my favorite of the night. It sounds strange, BBQ and ranch? Yeah, but it's soooo good.

Bruschetta Lentil Salad

Ingredients:
1 box steamed Trader Joe's Lentil Beans (in the produce section)
1 jar Trader Joe's Bruschetta
1 T. cilantro (or parsley)
1 T. Olive Oil
1 whole lime, squeezed (or lemon)

The lemon and parsley go well together, and the cilantro and lime go well together (my fav).

Recipe:
1. Mix above ingredients in bowl, serve and enjoy!

Texas Caviar or Bean Dip

I've seen this recipe by a few names, but either way you call it, it's delicious!
Ingredients:
1 15-oz can black beans, drained
1 15-oz can corn, drained
2 tomatoes, chopped
1 avocado, chopped*
1 c. cilantro, chopped
1/2 c. green onion, chopped
1 package dry Italian dressing mix, prepared as instructions direct **
1/4 c. vinegar
3 T. water
1/2 c. oil

* I left out the avocados this time. Honestly, I don't really think they add much other than a mushy factor. Avocados, by nature, are rather bland and actually absorb the taste of the flavors it's around.
** I actually half the vinegar, water, and oil, but keep the full amount of dressing mix. I do this just because as the dressing sits overnight or for a few hours, the tomatoes tend to run. So....when I half it the dip isn't soupy by morning.

Recipe:
1. Dump all ingredients except for dressing in a medium bowl.
2. Mix Italian dressing together in a dressing vase or ziploc bag. To do so, pour in 1/4 c. vinegar and 3 T. water. Add the dressing and shake well. Add the oil to the mixture and mix again.
3. Pour dressing over vegetables in bowl. Mix together.
4. Refrigerate approximately 1 hour before serving. Serve with tortilla or pita chips.

Honestly, this is one of our favorites! It can be put together in less than 10 minutes and, I think, is pretty healthy. Love it! Eat it! I do think a little garlic might be a tasty addition...or maybe just a hint of lime. I'm not sure....I'll have to try that next time.

Chipotle Chicken Taco Salad

Ingredients:
Salad:
4 c. chopped Romaine Lettuce
2 c. chopped grilled chicken
1 c. cherry or grape tomatoes, washed
1/3 c. vertically-sliced red onions
1 avocado, cubed
1 15-oz. can black beans, rinsed and drained
1 8 3/4 oz. can corn, rinsed and drained

Dressing:
1/3 c. chopped fresh cilantro
2/3 c. light sour cream
1 1/2 + tsp. adobo sauce from canned chipotle chilies
1 tsp. chili powder
4 tsp. fresh lime juice
¼ tsp. salt

Tortilla Strips, optional

Recipe:
1.Make sure all salad ingredients that need to be washed or rinsed have been.
2. Combine lettuce, chicken, beans, corn, onion, and tomatoes in a large bowl and gently mix with your hands. Set aside.
3. Mix dressing ingredients. I say to start with 1 1/2 tsp. of adobo sauce and then go from there, probably 1/4-1/2 tsp. at a time. If you’re serving this for a crowd, it’s probably better to err on the side of not spicy enough rather than too spicy, but if you’re just making it for your family and you have taste buds of steel, have at it. You could even chop up one of the chilies and toss it in there if you’re feeling super-brave. Then taste the dressing and you’ll know what heaven tastes like. Set dressing aside.
4. If you’re making tortilla strips, fry those puppies up now.
5. When you’re ready to serve, add avocado, tortilla strips, and dressing. Gently combine and serve.

So, Lindsay actually wasn't able to make it to salad night, which meant her salad wasn't there! But, looking at the recipe and knowing that it came from Our Best Bites, the odds are pretty high that I would like it!

Mango Quinoa Salad

Ingredients:
2 c. cooked quinoa at room temperature, or chilled*
1 14-oz can black beans, drained and rinsed
1 medium mango, peeled and diced
1 red bell pepper, diced
6 green onions, thinly sliced
1 handful chopped cilantro (about 1/2 cup)
4 T. red wine vinegar
3 T. extra virgin olive oil
1-2 T. fresh lime juice
kosher salt
freshly cracked black pepper

*Quinoa can be cooked in water or broth. I suggest using vegetable or chicken broth for enhanced flavor, but plain water works great too.

Recipe:
1. Place cooked quinoa in a large bowl. Add mango, red pepper, green onion, black beans, and cilantro.
2. In a small bowl combine vinegar, olive oil, and lime juice. Whisk until smooth and pour on top of salad. Toss to combine and add salt and pepper to taste. Chill for at least one hour before serving.

I don't know why I didn't see this one at salad night! I really like mango and now that I know I like quinoa type pasta, I'm sure I would have liked it! Almost all of my most favorite ingredients are in this recipe! Definitely going to be trying this one....maybe when LaDon is out of town though.

5 Can Taco Soup


Ingredients:
1 lb. ground beef
1 onion, chopped
2 pkgs. taco seasoning
1 large can tomato juice
1 can stewed tomatoes
1 can kidney/red beans, drained
1 can garbanzo/navy beans, drained
1 can corn, drained

Recipe:
1. Brown ground beef with 1 chopped onion. Drain. Put in crock pot and add the remaining ingredients. *
2. Allow soup to simmer for several hours then serve with grated cheddar cheese and tortilla chips. Feel free to substitute the vegetables with ones you like best.

* Instead of browning the beef before hand, I just threw it in the crock pot and mushed it with a spoon after a few minutes. Worked for me, but if you're going to be gone all day I would brown it before hand.

We really liked this soup. And talk about easy! I love crock pot meals. If you liked the Chicken Tortilla Soup, then you'll probably like this. It tastes very similar to the Chicken soup, but with beef! We also added sour cream to the garnish list. Cilantro also would have tasted good, but the cilantro in the garden has gone to seed.

Tuscan Lamb Chop Skillet

Ingredients:
8 lamb rib chops, cut 1 in thick
2 t. olive oil
3 cloves garlic, minced
1 19-oz white kidney beans, rinsed and drained
1 8-oz can Italian style stewed tomatoes, undrained
1 T. balsamic vinegar
2 t. snipped fresh rosemary

Recipe:
1. Trim fat from chops. In a large skillet cook chops in hot oil over medium heat for 9 to 11 minutes for medium, turning once. Transfer chops to a plate; keep warm.
2. Stir garlic into drippings in skillet. Cook and stir for 1 minute. Stir in beans, undrained tomatoes, vinegar, and snipped rosemary. bring to boiling; reduce heat. simmer, uncovered, for 3 minutes. Spoon bean mixture onto 4 dinner plates. arrange 2 chops on each plate. If desired, garnish with rosemary sprigs.
4. Serve with Italian bread and some mixed greens.

Maybe we aren't lamb people. The bean mixture was okay, but we didn't like the meat. Maybe that's also because it didn't have any kind of seasoning that went into cooking it. But we do like gyros. I dunno. Most definitely won't be making this one again. Sorry, Better Homes and Gardens!
