This blog is where I like to put to recipes that I have tried, know, and haven't tried. Sometimes I try so many new recipes that I can't remember if I've tried them and what they tasted like. Therefore, this blog documents my cooking adventures so that I can keep sane in the kitchen. (If it has a source, then I've linked back to it.)

Homemade Ranch Dressing Mix

Ingredients:
2 T. dried parsley
1 t. dried dill
1 t. garlic powder
1 t. onion powder
1/2 t. dried basil
1/2 t. pepper

Recipe:
1. Add each of the dried spices to a bowl and gently stir.
2. Store in a resealable plastic bag or small canning jar with tight fitting lid.
3. To make the ranch dressing, whisk together 1/3 c. mayonnaise with 1/4 c. milk and 1 T. of the homemade ranch dressing seasoning mix. (Makes about 4 T. of dressing)
4. Season with salt, to taste.
5. Use immediately or store in the refrigerator for up to 3 days.

So, this rating is not a full-on rating. I used the dry mix in a crock pot recipe, so I'm not sure if it tastes like Ranch dressing or not when it's all put together. But, it did smell like it! One thing that I think I'll do differently next time is crush up the parsley even more.

Skinny Baked Mozzarella Sticks


Ingredients:
12 sticks part-skim, reduced sodium mozzarella sting cheese (Sargento) *
1 large egg, beaten
2 T. flour
5 T. Italian seasoned breadcrumbs
5 T. panko crumbs (confused? just a fancy word for Japanese bread crumbs.) **
2 t. Parmesan cheese
1 T. dried parsley
olive oil cooking spray ***

* I just used the cheese sticks I had in the fridge.
** Didn't have any on hand, so I didn't include them.
*** Just used the cooking spray I had on hand

Recipe:
1. Cut cheese in half to give you 24 pieces. Place cheese in the freezer until cheese is frozen.
2. In small bowl, whisk the egg. Place the flour on another small dish. In separate bowl, combine bread crumbs, panko, Parmesan cheese, and dried parsley.
3. Dip the frozen sticks in flour, shaking off excess, then into the egg, then coast with the crumbs. Repeat this process with the remaining cheese placing them on a try with wax paper.
4. Place cheese back into the freezer until ready to bake (this is a must or they will melt before the crumbs get golden.)
5. When ready to bake, preheat oven to 400 degrees F. Line a baking sheet with aluminum foil and lightly spray with oil.
6. Place frozen cheese sticks on baking sheet. Spray the stops of the mozzarella sticks with a little more oil and bake in the bottom third of your oven until crisp, about 4-5 minutes.
7. Turn and bake an additional 4-5 minutes watching them closely so they don't melt.

Well, our mozzarella sticks completely melted out. I should have taken them out at 5 minutes rather than sticking them in for the second 4-5 minutes. They were already pretty melted when I turned them. That went wrong, and I think my parsley is a little old. I kept tasting dirt. Gross. So, the melted cheese part was good, but new parsley and less cooking would make these really good.

Ravioli Soup

Ingredients:
1 lb. ground beef
2 c. water
2 28-oz can crushed tomatoes *
1 6-oz can tomato paste
1 1/2 c. chopped onion
1/4 c. minced parsley, fresh **
2 garlic cloves, minced
3/4 t. dried basil
1/2 t. dried oregano
1/2 t. onion salt ***
1/2 t. sugar
1/2 t. salt
1/4 t. pepper
1/4 t. dried thyme
1 9-oz pkg refrigerated cheese ravioli ****
1/4 c. grated Parmesan cheese
additional minced fresh parsley, optional

* I only had diced tomatoes on hand
** I only had dried on hand
*** I didn't have any onion salt, so I used onion powder
****We only had the frozen kind, so I just cooked it before hand according to the directions

Recipe:
1. In a Dutch oven, cook beef over medium heat until no longer pink; drain. Add the water, tomatoes, tomato paste, onion, parsley, garlic, and seasonings; bring to a boil. Reduce heat; cover and simmer for about 30 minutes.
2. Meanwhile, cook ravioli according to package directions; drain. Add to soup and heat through. Stir in the Parmesan cheese. Garnish with additional parsley if desired.

This is NOT a soup. The recipe might claim to be a soup, but in reality, it turns out to be a thick and delicious meat sauce. The next time I make this I'll definitely be serving it as the sauce and put it with spaghetti noodles. I'll also cut back on the oregano and thyme. I thought those tastes were a bit too overpowering.

Balsamic Marinated Vegetables

Ingredients:
Vegetables:
1 1/2 c. uncooked broccoli, seperated into florets
1 1/2 c. uncooked cauliflower, seperated into florets
1 medium zucchini, sliced
12 baby carrots, sliced
1/2 sweet onion, sliced thin and seperated into rings

Balsamic Dressing:
1/2 c. water
1/4 c. balsamic vinegar, plus
2 T. balsamic vinegar
1/4 c. finely snipped fresh parsley
2 T. olive oil
2 garlic cloves, minced
1/2 t. black pepper
salt

Recipe:
1. Combine the vegetables in a large glass or ceramic bowl.
2. Mix dressing ingredients and pour over vegetables.
3. Stir well, cover and refrigerate for 6 to 24 hours, stirring occasionally.
4. Cooking time reflects time to marinate vegetables.

Notes:
I used purple onion, broccoli, baby carrots, red peppers, and cucumber instead of the veggies they suggested. I also ended up making more sauce/marinade than they called for. I had more veggies than they asked when I was done chopping, and the marinade seems pretty skimpy when you just do the amount they call for, so i doubled the water and tripled the vinegar and oil and garlic, and just shook in a bunch of pepper. i didn't have any parsley so i left it out. I think it's pretty flexible so do what you want!

This one looked really good, however, I didn't try it because I've learned, through the recipes on this blog, that I really don't like the balsamic flavor. I'm sure it was delicious for those who like that flavor though!

American Lasagna

Ingredients:
1.5 lbs lean ground beef
1 onion, chopped *
2 cloves garlic, minced
1 T. chopped fresh basil **
1 t. dried oregano
2 T. brown sugar
1 1/2 t. salt
1 29-oz can diced tomatoes
2 6-oz cans tomato paste***
12 dry lasagna noodles ****
2 eggs, beaten
1 pint part-skim ricotta cheese
1/2 c. grated Parmesan cheese
2 T. dried parsley
1 t. salt
1 lb. mozzarella cheese, shredded
2 T. grated Parmesan cheese

* Of course, I substituted with dried chopped onion ~1 palm full
** I just used dried basil
*** I didn't have any tomato paste, so improvised and just dumped in some spaghetti sauce. Close enough.
**** To cut prep time I used oven ready lasagna noodles. It means no cooking the noodles to make the soft before oven cook time. It's awesome. This allows the cook to skip Recipe step #4.

Recipe:
1. In a skillet over medium heat, brown ground beef, onion and garlic; drain fat.
2. Mix in basil, oregano, brown sugar, 1 1/2 t. salt, diced tomatoes, and tomato paste. Simmer for 30-45 minutes, stirring occasionally.
3. Preheat oven to 375 degrees.
4. **skip if using oven ready noodles** Bring a large pot of lightly salted water to a boil. Add lasagna noodles, and cook for 5-8 minutes, or until al dente; drain. Lay noodles flat on towels, and blot dry.
5. In a medium bowl, mix together eggs, ricotta, Parmesan, parsley, and 1 t. salt.
6. Layer 1/3 of the noodles in the bottom of a 9x13 inch baking dish. Cover noodles with 1/2 ricotta mixture, 1/2 of the mozzarella cheese, and 1/3 of the sauce. Repeat. Top with remaining noodles and sauce. Sprinkle additional Parmesan cheese over top.
7. Bake in the preheated oven for 30 minutes. Let stand 10 minutes before serving.

Um...easy lasagna that doesn't take a long time to cook....apart from the 30-45 minutes of simmering. The recipe author suggested putting the lasagna all together the night before and letting the flavors blend and then cook it the next day. But, I thought the flavors were pretty strong and blended enough. It's a tasty lasagna with just a tad bit of sweetness. I really liked it. It makes a lot and is plenty for LaDon and company.

Bow Ties with Sausage, Tomatoes, and Cream

Ingredients:
1 12-oz package bow tie pasta
2 T. olive oil *
1 lb. sweet Italian sausage, casings removed and crumbled **
1/2 t. crushed red pepper flakes
1/2 c. diced onion
3 cloves garlic, minced
1 28-oz can Italian-style plum tomatoes, drained and coarsely chopped ***
1 1/2 c. heavy whipping cream
1/2 t. salt
3 T. minced fresh parsley

* I didn't use the olive oil at all.
** I just bought a package of Italian sausage, browned and drained it.
*** Bought a can of Italian-style diced tomatoes and didn't drain.

Recipe:
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook in boiling water for 8-10 minutes or until al dente; drain.
2. Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly browned. Stir in onion and garlic and cook until onion is tender. Stir in tomatoes, cream, and salt. Simmer until mixture thickens, about 8-10 minutes.
3. Stir cooked pasta into sauce and heat through. Sprinkle with parsley.

We loved it! The red pepper adds a nice little kick. The cream sauce is perfect. It's just really good. And best of all, it's served with "butterfly noodles."

Zesty Chicken

Ingredients:
6 skinless boneless chicken breasts *
2 packages zesty Italian seasoning **
2 cups water ***
2 cans cream of chicken soup
8 oz. cream cheese
1/8 tsp. parsley
*I usually only use 3-4
**when making a double batch I use 3 packages instead of 4
***I usually cut the water in half to make the sauce thicker
Recipe:
1. In crock pot mix together Italian Seasoning, water, cream of chicken soup, and parsley. Add chicken to mixture.
2. Cook on low for 6-8 hours *
3. 1 hour before serving cut cream cheese into cubes, add to crock pot. You may need to use a fork to break up the cubes of cream cheese.Serve on pasta or rice. **
*I usually cook it on high for 3-4 hours – perfect for cooking while at church!
**I favor wide egg noodles.

We LOVE this recipe. It's not new for us, but I still had to share it. It's so easy that LaDon made it when I was on partial bedrest when pregnant with Daniel. We got this recipe from Kristen (who is the Queen of the tastiest and easiest recipes around). Anyways, the seasoning is perfect, it limits the chicken mess you have to deal with, and Ally loves it! Super tasty.

Mama's Best Broiled Tomato Sandwich

Ingredients:
2 T. olive oil
2 T. balsamic vinegar *
4 ripe tomatoes, sliced
3 T. mayonnaise
1/2 t. dried parsley
1/4 t. dried oregano **
1/4 t. ground black pepper
3 T. grated Parmesan cheese
4 slices bread, lightly toasted
* I substituted the balsamic vinegar with red wine vinegar + 1 T. sugar
** I didn't have oregano alone, so I just used Italian seasoning
Recipe:
1. Preheat the broiler.
2. In a shallow bowl, whisk together olive oil and vinegar. Marinate tomatoes in the mixture for at least 10 minutes, stirring occasionally.
3. In a small bowl, combine mayonnaise, parsley, oregano, pepper, and half the Parmesan cheese. Spread mixture on each slice of toasted bread. Divide marinated tomatoes evenly between 2 slices and sprinkle with remaining Parmesan cheese. *
* I actually topped with with grated mozzarella as well.
4. Place on a baking sheet and broil for 5 minutes or until cheese turns golden brown. Serve immediately, open faced or closed.

Despite not having all of the exact ingredients I think this turned out pretty well. It's light, it's easy, it's quick. The sandwich has a good balance between sweet and tangy. I don't like mayo at all, but I couldn't taste it. Next time I think I will add more cheese, both Parmesan and mozzarella, before broiling. We ate the sandwiches closed. This sandwich would definitely be good with a soup.
