This blog is where I like to put to recipes that I have tried, know, and haven't tried. Sometimes I try so many new recipes that I can't remember if I've tried them and what they tasted like. Therefore, this blog documents my cooking adventures so that I can keep sane in the kitchen. (If it has a source, then I've linked back to it.)

Pre-Baked Pizza Crusts

Her little pizza is the 4 of 5

Ingredients:
1 packet yeast OR 2 1/4 t.
1 1/4 c. warm water
3 c. bread flour
1 1/2 t. sea salt *
2 T. olive oil

* I didn't have any sea salt so I just used Kosher salt

Recipe:
1. Add yeast to warm water. Mix and set aside for 5-10 minutes.
2. If using a stand mixer, use the dough hook. Mix flour, salt, and olive oil. Add yeast mixture and on medium speed, mix dough. Continue letting dough hook kneed until smooth and elastic (about 10 minutes).
3. Line two baking sheets with parchment and dust with flour.
4. Divide dough into 16 even pieces. Tuck edges under to make 16 small balls of dough. Place each ball onto prepared baking sheets. Cover with plastic wrap and place in lukewarm oven for 45 minutes to rise.
5. After rising, roll dough out into 3-4 inch circles. Dough should not be too thin.
6. Place baking sheet in oven and preheat everything to 475 degrees F.
7. When oven and sheets have preheated, bake for 10-15 minutes or until lightly browned.
8. Use immediately, store in air tight container for 3 days or freeze.
9. To use dough to make fresh pizza straight from the oven rather than pre-baked crusts, increase oven temperature to 500 degrees, and after rolling out the dough, top raw dough with sauce, cheese and toppings and bake on pizza stone for 10-15 minutes or until browned and bubbling.

First things, first. I loved working with this dough. It was so smooth and fluffy and felt like it was going to make a delicious pizza crust. I love bread flour! However, I think the temperature and cook time were way too high/long. Instead of soft little pizza crusts, they came out as hard burnt crackers (as seen in the picture). I, thankfully, saved a few just in case it didn't turn out and cooked them at 450 for 6 minutes. They turned out perfectly! So, I don't really like the recipe as is, but with the adjustments it turns out well.

Cuban Midnight Sandwich


Ingredients:
1/2 c. mayonnaise *
2 1/2 T. Italian dressing *
4 hoagie rolls, split lengthwise and toasted **
1/4 c. prepared mustard
1/2 lb. thinly sliced cooked deli turkey
1/2 lb. thinly sliced cooked deli ham
1/2 lb. thinly sliced Swiss cheese ***
1 c. dill pickle slices
1/4 c. olive oil

* Since I was only making 2 sandwiches, I obviously cut the mayo and Italian way down. Same thing with the mustard
** I just made my own sandwich bread instead of buying it.
***Swiss is great and all, but Provolone is the way to go. Love that stuff.

Recipe:
1. In a small bowl, mix together mayonnaise and Italian dressing. Spread mixture on bottom half of toasted hoagie rolls.. Spread each roll with mustard.
2. On each roll, arrange layers of turkey, ham, and cheese. Top each with dill pickle slices. Add tops and brush tops and bottoms with olive oil.
3. Heat a nonstick skillet over medium-high heat. Place sandwiches in skillet. Cook sandwiches for 2 minutes, pressing down with a foil-covered plate or spatula. Flip and cook for 2 more minutes or until cheese is melted.
4. Remove from heat, place on plates, and cut in half diagonally.

I loved the taste of the olive oil on the bread. The cheese didn't melt at all in the 4 minutes of cooking in the skillet, so next time I think I'll use our Panini maker. LaDon really liked the sandwiches which is great! I've never been a huge sandwich lover though, so for me to say it was pretty good is probably something. Right? Maybe not.

Jamie's Breakfast Bagel Sandwiches

Ingredients: (for 1 bagel) for more than one bagel just double everything
1 Asiago-cheese bagel, or any kind of cheese bagel
1 1/2 eggs, scrambled *
2-4 slices of bacon, cooked **
a handful of cheddar cheese
a dollop of sour cream (optional, but we love it)

* Make the scrambled eggs the way you like them. For us, it's a little bit of milk and cheese, seasoned salt, and a half pinch of pepper. Occasionally I'll throw in some garlic salt.
** Bacon can be replaced with sausage or ham. Sausage is our other favorite.

Recipe:
1. Preheat oven to 350-ish.
2.Scramble the eggs. Cook the bacon. When done, begin the layering.
3. Cut the bagel in half. Starting with the bottom half layer up: scrambled eggs, cheese, bacon, top half of bagel.
4. Wrap bagel sandwich in foil and place in oven long enough for bagel to be warm and cheese to melt. Probably about 5-10 minutes.
5. Take bagel out and open up. Place dollop of sour cream on top of bacon. Replace the bagel top and enjoy!

We love this breakfast food for dinner. And because it's so NOT healthy, we only have it every few months. I'm not really sure what makes it so good other than we just really like everything that goes into it. Seriously, who doesn't like cheese and bacon?
