This blog is where I like to put to recipes that I have tried, know, and haven't tried. Sometimes I try so many new recipes that I can't remember if I've tried them and what they tasted like. Therefore, this blog documents my cooking adventures so that I can keep sane in the kitchen. (If it has a source, then I've linked back to it.)

Sweet and Sour Chicken

Ingredients:
1 t. garlic salt
1/2 t. black pepper
2-3 T cornstarch *
3/4 c. sugar
1/2 c. vinegar
1/2 c. chicken broth
3-4 T. ketchup
1 T soy sauce

2-3 boneless, skinless chicken breasts


* I used minute tapioca instead. 

Recipe:
1. In a slow cooker, mix together all ingredients except the cornstarch and chicken. Stir until you have a smooth consistency.
2. Add chicken to slow cooker. Cook on low for 4-6 hours.
3. About 30 minutes before removing chicken and sauce from pot, remove chicken, shred, add tapioca and stir a few times, and replace chicken.
4. Serve over rice or in a tortilla with traditional toppings such as lettuce, tomatoes, cheese, etc. *

* I actually ate mine over quinoa.

So, even though this recipe isn't what the source has it down as, I thought it was pretty good. I wanted something easy, like a crock pot, and I think I got it. Daniel really liked. I'd make this one again.

Chinese Chicken Salad



Ingredients:
Salad:
12 3-inch wonton skins, sliced into 1/4" strips *
1/4 c. canola or corn oil for frying
4 c. chopped romaine lettuce
1 chicken breasts, shredded **
2 green onions, chopped
1/4 c. sliced almonds, toasted lightly
1 T. sesame seeds
2 c. cooked fusilli pasta noodles, cooled

* I cut mine into 1-inch strips and then broke it into pieces as I topped the salad.
**I doubled the chicken.

Dressing: 
1 1/2 T vegetable or grapeseed oil
6 T. seasoned rice vinegar
1 t. sesame oil (add more to taste if you prefer a strong sesame taste) *
1 1/2 t. sugar
2 t. light soy sauce
2 T. sesame seeds
1/2 t. fresh ground pepper
1/8 t. salt

*I probably did about 1 1/2-2 t. 

Recipe:
1. Heat canola or corn oil in a skillet over medium-high heat. When oil starts to shimmer, fry wonton skins batches of 5-7 strips for 30 seconds each side or until lightly browned, working quickly so they don't burn. Remove oil and drain on paper towels until cooled.
2. In a large bowl, combine lettuce, chicken breast, green onion, almonds and pasta.
3. Combine dressing ingredients in a small bowl. Whisk well until sugar dissolves. Dress lettuce mixture with 2-3 tablespoons of sesame dressing and top with sesame seeds and wonton strips and serve.

I loved this salad. Even LaDon, who doesn't like Chinese food a lot, really liked it. The dressing is light and not too overbearing. I loved the evrey aspect of this salad. The pasta surprised me, but it went great with the shredded chicken and almond slices. I'll definitely be making this again.

The Best Sloppy Joes

Ingredients:
2 T. vegetable oil
2 onions, roughly chopped
2 1/2 lbs. ground beef
2 T. tomato paste
2/3 c. smoky BBQ sauce (or whatever BBQ sauce is in your fridge)
1/2 c. ketchup
1/4 c. Worcestershire sauce
1/4 c. soy sauce
freshly ground black pepper
8-12 potato rolls

Recipe:
1. Heat the oil in a large skillet over medium heat. Add the onions and cook, stirring, until they start to turn translucent, about 4 minutes.
2. Add the beef and cook, stirring and breaking up the meat, until it is finely crumbled, the liquid boils off and the meat begins to brown, about 10 minutes.
3. Drain the grease off the meat and onions.
4. Stir in the tomato paste, and keep stirring until the meat is coated.
5. Add the BBQ sauce, ketchup, Worcestershire, soy sauce, and pepper, and bring to a boil.
6. Cook until the sauce is slightly thickened, 4-5 minutes.
7. Serve the sloppy Joes hot with warm rolls.

This was a pretty good recipe. I halved it and the servings came out to the perfect size for LaDon and I. I used Spicy and Sweet BBQ sauce so there was a little bit of a kick there that normal BBQ sauce doesn't have. It definitely doesn't taste like sloppy Joe juice from a can. It's delicious, although not the taste that I'm used to in a sloppy Joe. Easy, easy recipe. One thing I need to do is find something to do with the extra tomato paste. I would make this one again for sure. I'm wondering if I can figure out a way to do this in a crockpot so that we can eat it in the summer with corn on the cob and watermelon without heating up our A/C-deprived apartment.

Teriyaki

Ingredients:
1 c. soy sauce
1 c. white sugar
1 t. ginger
1 t. garlic powder
a few pounds of beef such as stew bits, beef tip, or 1-inch cubes of steak

Recipe:
1. Mix all ingredients, except meat, in a large or medium bowl.
2. Place meat in bowl. Stir a few times so that all meat gets exposed to mixture. Cover and marinate in the refrigerator for 24 hours, or over night. Every few hours, stir the meat/marinade mixture.
3. Preheat oven to 300 degrees. On a skillet or frying pan, cook meat on medium heat until center is no longer pink. Place cooked meat in a jelly roll in the oven to keep warm until the remaining meat is done.
OR
Skewer meat on moist sticks and cook on a grill (don't ask me how long because I have no idea. I've only ever cooked it inside.)
4. Skewer it or serve on hot rice.

This recipe is great, but if you don't get good meat it can be a flop. I really like it with more tender meat, but tougher meat is fine too. It's easy and savory.

Thai Chicken

Ingredients:
Sauce:
4 chicken breast halves - steamed and cubed or shredded
1 c. chicken broth
2 T. soy sauce
4 T. chunky or creamy peanut butter
1 garlic clove, crushed *
red pepper flakes to taste (usually about 1/4 t.)

Condiments: (whatever you would like)
chopped peanuts
coconut
crushed pineapple
red, green, yellow diced peppers (Melissa's favorite!)
canned Mandarin oranges (my favorite!)
raisins or Crainsins
chow mein noodles (are those the crunchy ones?)
cilantro, chopped

* I usually just used minced garlic


Recipe:
1. Combine and heat chicken broth, soy sauce, peanut butter, garlic, and pepper until peanut butter is dissolved.
2. Add pre-cooked chicken.
3. Serve over steamed rice with your choice of condiments. *

*I like to make my rice chicken flavored by adding a bouillon cube to the water. So. Much. Better.

This is one of our absolute favorite recipes! We love it....so good. The great thing about this dish is that it's new every time you have it because you can make it taste so different depending on what you put on it! And, if you don't like too much kick you have total control over that and can experiment with just the right amount. We, however, like the kick. Oh, and I usually don't have all the favorite condiments on hand, but I usually have enough to make it work! Another perk, this is quick!

Also use the sauce can be used for Satay Chicken Pizza.

Recipe A Chicken Wings

Sorry! No picture! I totally spaced it!

Ingredients:
1/3 c. butter, melted
1/3 c. soy sauce
1/3 c. honey
1/3 c. hot sauce (like Texas Pete's or the likes)
chicken wings

* I love the hot spicy kick to wings, so I think next time I will decrease the soy sauce element just a little. And, I think I will also toss the wings in flour, just lightly, before dousing them in the sauce mixture. I don't know if that would work, but whatever!

Recipe: (are you ready for very simple wings?)
1. Mix the above ingredients together.
2. Dip the wings in the sauce.
3. Lay out the sauce covered wings on a baking sheet (easier clean up if covered with foil) and throw them in the oven for 10-15 minutes at 400-degrees.

LaDon and Ally loved these! Talk about vacuum sounds and bone crunching. I, unfortunately, have this weird thing with raw meat. After making them, I couldn't look past the sauce and eat them. (Meatloaf is similar in this way. I love it, but I have a hard time eating it when I know that I was just mushing it all together.) Which, is a huge bummer because the sauce smelled and tasted wonderfully! I think the only way I will be able to eat homemade chicken wings is if someone else makes them for me....which LaDon volunteered to the next time their on the menu :) Lovely husband. I thought the juices from the chicken ran some of the sauce off, so I ended up re-coating about halfway through cooking time. I can't wait to try these again and see how they turn out!
